1. きめ細やかな霜降り
京丹波平井牛は、黒毛和種の中でも脂の入り方が美しいとされ、まるで絹のように繊細な霜降りが特徴です。
これは、丹波の自然環境や飼育期間の長さ、飼料管理の丁寧さによって生まれたものです。
2. 融点が低く、口溶けがなめらか
一般的な和牛の脂の融点(溶ける温度)は約30~35℃ですが、京丹波平井牛の脂は人肌程度(26〜28℃前後)でとろけるといわれます。
そのため、口に入れた瞬間にすっととろけ、重たさがなく、くどさのない上品な脂として評価されています。
3. 香りと甘みのある脂
平井牛の脂はただとろけるだけでなく、ほんのりとした甘みと香ばしい香りを持っています。
4. 胃にもたれにくい
脂が軽やかで融点が低いため、少量でも満足感がありながら、胃に負担が少ないのが特徴。
高齢の方でも安心して楽しめます。
5. 季節の食材と調和する脂
平井牛の脂は自己主張が強すぎず、出汁や旬野菜との相性が非常に良いです。

nurtured in Kyoto—the thousand-year capital of Japan.
“Kyoto Tanba Hirai Beef” is a masterpiece born from the rich natural environment of Kyotanba and five generations of carefully inherited cattle-raising techniques.
Its lineage traces back to the prestigious Tanba cattle, even recorded in the “Kokugyu Jūzu” (The Ten Breeds of Japanese Cattle), a historical document from the Kamakura period (1310).
Celebrated for its exceptional quality, this wagyu has been adopted by five-star hotels, awarded the Kyoto Governor’s Prize for 12 consecutive years, and honored at the National Wagyu Competitive Exhibition.
Over approximately 30 months, each head of cattle is carefully raised on pure Tanba spring water and specially selected feed, resulting in beef that is exquisitely marbled, tender, and melts in your mouth.

<Characteristics of Kyoto Tanba Hirai Wagyu Fat>
1. Fine, Delicate Marbling
Kyoto Tanba Hirai Wagyu is known for its beautifully distributed fat, even among Japanese Black cattle. Its marbling is exceptionally fine and silky, resembling delicate strands of silk.
This unique quality is a result of the rich natural environment of Tanba, extended rearing periods, and meticulous feed management.
2. Low Melting Point and Smooth Texture
While most wagyu fat melts at around 30–35°C (86–95°F), the fat of Kyoto Tanba Hirai Wagyu is said to melt at about 26–28°C (79–82°F)—close to body temperature.
As a result, it melts effortlessly in the mouth, delivering a smooth, elegant flavor without heaviness or greasiness.
3. Aromatic and Naturally Sweet Fat
The fat of Kyoto Tanba Hirai Wagyu is not only tender but also carries a subtle sweetness and a rich, savory aroma.
4. Light and Easy on the Stomach
Thanks to its low melting point and light texture, even a small amount provides a satisfying experience without being heavy.
It’s gentle on the stomach and can be enjoyed comfortably even by older guests.
